Well, I learned an interesting fact about reaping those benefits today. The American Institute for Cancer Research (AICR) found that chopping garlic activates its anticancer properties. The bad thing is that cooking it right after you chop it kills those substances.
The good thing is that - yes - you can still enjoy cooked garlic and reap the benefits. It just needs a little time.
The AICR explains that "an enzyme (called alliinase) gets released during chopping or crushing.
It goes to work immediately, converting one garlic component (an amino acid called alliin) into a different form called allicin. (That pungent aroma so characteristic of fresh garlic? That's allicin.) But this new form is highly unstable; before too long it rearranges itself into various anti-cancer compounds with chemical names like diallyl sulfide, diallyl disulfide, and diallyl trisulfide."
Cooking the garlic right away kills this enzyme before it works its magic. So just let the garlic sit for about ten minutes after you chop it. That's all. Oh, and if you are roasting it whole, AICR Nutrition Advisor Karen Collins, RD recommends that you "cut the top off the bulb, which is enough to release the enzyme, and let it sit for a bit before placing in the oven."
