After sampling some of the wraps a few days ago, I asked the chef for the recipe. I’m making it for Christmas breakfast because it’s the kind of dish you can do in advance and keep warm in a low oven for at least an hour. I also like it because you can leave out the ham (for vegetarians) or add extra vegetables if the elves in your family like them. And don’t take the recipe title too seriously: this makes a great lunch for any day of the week, too.
Black Forest Ham Breakfast Wraps Makes 4 wraps 1 small Spanish onion, in julienne strips
1 red pepper, cored, seeded and sliced into thin strips
1 tablespoon butter
Kosher salt and freshly ground black pepper to taste
8 eggs
¼ cup milk
1 pound Black Forest ham, sliced very thin
8 slices American cheese
4 sun-dried tomato wraps (buy large ones)
In a medium sauté pan, sauté the onion and pepper in the butter over medium heat until caramelized. Season to taste with salt and pepper.
In a bowl, whisk the eggs and the milk together. Season with salt and pepper.
Add the eggs to the skillet and cook over low heat, stirring, until they are set but still slightly runny. Do not overcook.
Arrange the wraps on a work surface. Top with slices of ham and cheese. Divide the scrambled eggs among the wraps. Fold up the wraps and roll them tightly, folding the ends over.
In a sauté pan over medium heat, arrange the wraps in a pan. Lightly sear on all sides (don’t add any butter or oil to the pan.) Slice the wraps in half or in quarters and serve.
